Minty Avocado as a Spread and Salad dressing for Brunch
1. Boil eggs to your desired form, preferably semi-hard boiled. Remove shell and slice.
2. Mash eggs in a small bowl and scoop 3 tablespoons of Minty Avocado sauce. Mix and use as spread on bread.
3. Shred carrots and cabbage. Slice tomato and chop the lettuce (this depends on the size. You could chop them to smaller bites).
4. Arrange these in bowl in any sequence. Scoop Minty Avocado sauce on salad and enjoy!
You will need:
4 Slices of Bread
Minty Avocado sauce
Bowl of Salad – 100g Wild Rocket, 2 Carrots, 100g Cabbage, 1 Tomato, Seedless Olives, 50g Lettuce. (Please note: you can buy off the shelf)
