Cook the macaroni in a large pan of salted boiling water as per packet instructions, until cooked but still firm to bite.
Melt the butter in a separate pan and stir in the flour until smooth. Add the milk slowly stirring continuously and cook for 2-3 minutes until velvety. Add the cheddar and Citrus Tomato Salsa, salt and pepper to taste. Mix well until the cheese has melted.
Mix your sauce with the macaroni pasta and serve. If you prefer, you can place the dish under grill for a few minutes to create a golden crust (add a little more cheddar on top for best results).
Alternatively cook macaroni cheese using traditional recipe and serve it with Citrus Tomato Salsa poured over the top or as an accompaniment sauce.
